Scalloped Potatoes and Ham
Makes 6-8 servings
1/3 C. flour
1/3 C. butter
3 C. milk
1 tsp. salt and pepper to taste
1/2 tsp. onion powder
1/2 tsp. garlic powder
3 1/2 C. shredded cheddar cheese
2-3 C. diced ham
Options: 1/4 C. thinly sliced onion, 1 C. Panko bread crumb topping, paprika garnish
- Boil potato slices until tender but not falling apart (or follow notes below for using uncooked potato slices.)
- Grease 9″x13″ baking dish, preheat oven to 350 degrees F.
- Make cheese sauce while potatoes are cooking. Melt butter in a medium saucepan over medium heat. Whisk in flour, salt, onion and garlic powder, whisking constantly, until flour is golden brown; about 2 minutes. Stir in milk and cook, stirring often, until thickened; about 2-3 minutes. Remove from heat and stir in cheese (3 C.). Stir in ham.
- Layer potatoes and cheese sauce, makes about 2 layers. (Note: If using uncooked potato slices you can just stir the potatoes, onions, and cheese and ham sauce all together before putting in the baking dish. This is how I do it.)
- Bake uncovered for 20-25 minutes, or until cheese sauce is bubbly. Top with remaining 1/2 cup cheese and return to oven long enough to melt the cheese. (Note: If making with uncooked potatoes, allow extra time for cooking, cover with foil and bake at 400 degrees F for about 1 1/2 hours. )
- Garnish with fresh chives or parsley, if desired. Serve immediately.
