Challenge – How Many Meals From A Pack Of Chicken
Sometimes I like to challenge myself to see how many meals I can make out of one purchase. This time it was a 12 pack of chicken thighs.
The first night I cooked 10 pieces, simmered in water on the stove top. I made mashed potatoes, gravy, corn, and a pan of Brown Sugar Biscuits (directions below) to go with it. We actually ate this for dinner and lunch the next day, with 4 pieces of chicken left. The extra biscuits are nice for breakfast or just to snack on.
With the 4 remaining pieces I shredded the chicken off the bones and made 10 chicken enchiladas, which gave us dinner and a couple more lunches. I made 2 quarts of bone broth with the discarded bones and skin.
For the 2 remaining pieces of uncooked chicken, I made teriyaki chicken burgers for dinner from those, with baked potatoes and sweet potatoes to go with.
One quart of broth was used to make an egg-drop soup, with fried rice, for dinner, with enough left for a couple lunches.
The other quart was used to make potato soup, with homemade bread, with enough for a couple dinners and lunches.
So, altogether, there were 5 separate prepared meals, and plenty of left-overs, made from the 12 chicken thighs. SCORE!
Brown Sugar Biscuits
2 Cups All purpose flour
2 1/2 tsp Baking Powder
1/2 tsp Baking soda
1/2 tsp salt
6 Tablespoons Butter
1/2 Cup Brown sugar
1 Cup Buttermilk
